Can I do the above? I can't see a way but I may have missed it as I bought the app only a few days ago.

You can record one track at a time. Recording an instrument, Loop->Record Loop then start playing to initiate the recording. For the vocal recording with the mic, you do Loop->Record Loop then hit the Record from Mic button in the upper right corner to start a mic recording.
