How do you change the name of an uploaded instrument? I saw "name" in the flotpatch & tried renaming, re-zipping and re-uploading but it didn't seem to work.

Any ideas?

You need to change the name in both the .flot and the .flotpatch as well as the sampleset_name in the flotpatch. Then zip it back up and try uploading. You'll probably want to delete the previous instrument in the device too.
